Cajun Salmon

As I mentioned here I am attempting to get my healthy(ier) living back on track. The past two weeks my diet has improved after the big Christmas splurge and tonight I completed my first workout. It was hard...very, very hard, but the feeling afterwards was amazing so I am holding on to that to get me through the next few workouts which I know will be equally difficult. I wanted to share some of my healthy recipes with you and the first is my very own Cajun salmon. It is incredibly simple to cook, tastes delicious and is super healthy.

2 boneless salmon fillets
2 peppers
1 onion
1 courgette
Handful of cherry tomatoes
New potatoes
Cajun spice- my favourite is Slap Ya Mama Cajun seasoning

1. Preheat the oven to 180C
2.Prepare the vegetables, cut the pepper, onion and courgette into sizeable chunks and put them into a roasting dish. Add a handful of cherry tomatoes.
3. Half your new potatoes and add them to your roasting tin. Drizzle olive oil and sprinkle salt and pepper onto your vegetables and potatoes, once this is done place in the oven. Cook for 30 minutes.
4. Coat the salmon fillet with the Cajun spice, then wrap in tin foil to make a parcel. Place in the oven and bake for 15 minutes. 
5. Once cooked, remove from the tin foil take a big 'ole' helping of roast vegetables and enjoy!
