Honeycomb Cupcakes


If you saw my last baking post, Whoopie Pies, you will be aware that my younger baking mad self has well and truly come back! Today I baked Honeycomb Cupcakes from my 'Bake Me A Cake' book. If you like the look of these and you are a fan of honey/Crunchie bars, these are definitely the cupcakes for you.

Ingredients

125g unsalted butter
50g caster sugar
2 eggs
75g clear honey (I used Rowleys)
125g self raising flour
1/2 tsp baking powder
1 tbsp milk

Topping

125g unsalted butter
300g icing sugar (can use golden)
2 tbsp milk
1 Crunchie bar, thinly sliced

1. Preheat the oven to 190C. Line a muffin tin with nine paper muffin cases.
2. Beat the butter and caster sugar in a bowl until pale and creamy. Gradually whisk in the eggs and honey until just combined. Fold in the flour, baking powder and milk.
3. Spoon the mixture equally into the paper cases.
4. Bake for 20 minutes or until the cupcakes are golden and risen. Cool in the tin for 5 minutes, then transfer to the wire rack and leave to cool completely. 
5. While the cakes are cooling make the buttercream topping. Whisk the butter until creamy. Gradually whisk in half the icing sugar, then add the milk and the remaing icing sugar. Whisk until light and fluffy. 
6. Fill a piping bag with the buttercream and pipe a swirl on top of each cake. Alternatively spread the buttercream on top of each cake. When ready to serve decorate each with a few slices of Crunchie.

Pomegranate Noir



I have just got back from a two week holiday in Florida, which if you follow me on Instagram you probably will have noticed. I had an amazing time and can't wait to share my holiday snaps with you.

It was my birthday just before we went on holiday and I got this beautiful Jo Malone candle, I wanted to get this post up before I went away but didn't end up having enough time. All I need to say is the packaging is gorgeous, is it just me or is Jo Malone's new branding even better than before? The smell is delicious, perfect for the upcoming cold winter months and how cute are these Jo Malone matches?  They are pricey so if you have a birthday or can hold out for Christmas I would seriously recommend asking for this gift.
